Ingredients
  • 1cup desiccated coconut
  • 1/2cup oats
  • 1/4cup pepitas
  • 1/4cup sunflower seeds
  • 1/4cup peanut butter
  • 1/4cup honey
  • 1/2tsp vanilla extract
  • 1tbsp coconut oil
  • 1.5tbsp water
Instructions
  1. Preheat oven to 180C.
  2. Line a 20cm x 20cm tray or similar and set aside.
  3. Combine coconut, oats, seeds and set aside.
  4. Combine peanut butter, honey, vanilla, oil and water and mix until well combined.
  5. Combine both mixtures and press into lined tray.
  6. Bake for 12-14 minutes or until golden.
  7. Cool completely in the pan (to avoid crumbling) before cutting into 12 bars.
  8. Store in an airtight container in the pantry for 2-3 days.
