Tawhai says: ‘These moist dense muffins are delicious and make the perfect snack or dessert, bonus is they are only 130 calories each. They are egg and nut free, can easily be made gluten free and dairy free if required.

Ingredients
  • 1/3 cup low fat milk or coconut milk
  • 1 tbsp white vinegar
  • 1 tbsp coconut oil melted
  • 3 tbsp light greek yoghurt or coconut yoghurt
  • 1/2 cup cocoa
  • 1 tsp baking powder
  • 1 cup wholemeal self raising flour
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup plus another 1 tbsp of honey or other liquid natural sweetener
  • 25 g dark chocolate

Instructions
  1. Preheat the oven to 180C and grease your muffin tins or add muffin liners. Whisk the milk, oil, yoghurt and vinegar together in a bowl and set aside for 10 minutes (the coconut oil may solidify but don't worry).
  2. In another bowl sift the flour, cocoa and baking powder together before adding the salt, honey and vanilla. Combine well.
  3. Gently mix the two bowls of mixtures together until combined then spoon evenly between 10 muffin tray holes. Bake for 15 minutes or until cooked through.
  4. Once the muffins have cooled melt dark chocolate in the microwave with a dash of water in 10 second increments until melted. Mix well and lightly ice the top of each muffin using the back of a teaspoon.
  5. Best kept in an airtight container in the fridge or frozen and heat in the microwave before eating.

Recipe makes 10 muffins at 130 calories per muffin.
