Sponge
  • 6 eggs separated
  • 3/4 cup coconut sugar
  • 1 tsp vanilla
  • 2 tbsp almond milk
  • 1/2 cup almond meal
  • 1/2 cup wholemeal self raising flour
  • 1/2 tsp baking powder
Chocolate dipping sauce and coconut
  • 2/3 cup coconut oil
  • 1/2 cup cacao
  • 3 tbsp maple syrup
  • 1 cup desiccated coconut

Instructions
  1. Preheat oven to 170° and line a 20x20cm cake tin
  2. If you have a bench top mixer use this, otherwise use an electric beater.
  3. Whisk egg whites until soft peaks form
  4. Slowly add the coconut sugar, continue whisking until mixture is glossy
  5. Add egg yolks 1 at a time then add the vanilla and milk
  6. Gently fold in the dry ingredients until well mixed
  7. Pour into prepared tin and bake for 25 minutes, or until top is golden and firm to touch and skewer comes out clean
  8. Leave to cool
  9. Carefully cut the sponge in half and spread bottom half with the jam
  10. Reassemble and then cut the sponge into 16 lamington-sized pieces
  11. Combine coconut oil, cacao and maple syrup and mix until smooth
  12. You may choose to add extra maple syrup depending on how sweet you want it
  13. Dip each piece of lamington into the chocolate sauce, and then dip and roll in the desiccated coconut. Leave to dry on a wire rack until set.
