Delicious Low Carb Zucchini Noodle Bolognese

All around the world, parents have been using bolognese as a way to sneak more veggies into their families. And now you can add yet another serve of greens to the traditional family favourite, thanks to zucchini noodles!

These ‘noodles’ give you that pasta feeling but with a much lower hit of carbohydrate. This means you won’t be left feeling too-full and sluggish after your meal.

If you don’t have a spiraliser, you can make them with a vegetable peeler or a julienne peeler (these are available in most homewares stores and are not too expensive).

  • 4 medium zucchinis
  • 400 grams lean beef mince
  • 2 tablespoons extra virgin olive oil
  • 1 brown onion finely diced
  • 4 cloves garlic minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup tomato passata
  • Salt and pepper
  • 2 tablespoons grated Parmesan

Instructions
  1. Use a spiraliser to slice the zucchini into noodles or peel into ribbons and then slice into long noodles. Heat a pot of water on the stove until boiling.
  2. Heat oil in a fry pan over a medium-high heat. Add onions and garlic and sauté for 1-2 minutes or until onion is translucent.
  3. Add mince and brown, using a wooden spoon to break up any lumps.
  4. Add dried herbs and tomato passata and simmer for 3-4 minutes or until mince is cooked through. Season with salt and pepper.
  5. While sauce is cooking add zucchini noodles to boiling water and cook for 1 minute or until just tender. Drain and place in a serving bowl.
  6. Top with sauce and a sprinkle of Parmesan.
