  • 1 cup coconut desiccated or shredded
  • 2 tablespoons almond meal
  • 3 teaspoons coconut oil melted
  • 1.5 teaspoons mint essence
  • 2 teaspoons pure maple syrup
  • 2 teaspoons water
  • 120 grams dark chocolate 70% cacao or above

  • 2 tablespoons almond meal
  • 3 teaspoons coconut oil melted
  • 1.5 teaspoons mint essence
  • 2 teaspoons pure maple syrup
  • 2 teaspoons water

Instructions
  1. Blitz coconut, almond meal, coconut oil, mint essence, maple syrup and water until well combined and creamy in texture.
  2. This will take a few minutes of blitzing then stopping to scrape down the sides and blitzing again.
  3. Divide into 12 pieces. Roll into balls, flatten slightly and place on a tray lined with baking paper and set aside.
  4. Melt chocolate using your preferred method.
  5. Place 3/4 teaspoon of melted chocolate into a chocolate mould or patty case.
  6. Tilt moulds/cases so chocolate coats the base and up the sides. You may need to repeat this step a few times so that the chocolate, when set, creates a wall. 

  7. Pop in fridge or freezer to set.
  8. Once set, place a mint ball into each case then press down to fill the space.
  9. Top with remaining chocolate and pop back in the fridge or freezer to set.
