Using just 25g of butter and making a massive 10 serves, this slice is much healthier than a commercially prepared slice.

Dates are a great way to add sweetness – keep them on hand to make this recipe as well as for biscuits, muesli bars and bliss balls.

  • 100 g dates pitted
  • 200 ml water
  • 1/2 tsp bicarb soda
  • 1.25 cups wholemeal self raising flour
  • 1 egg
  • 1/3 cup milk of choice
  • 25 g butter melted
  • 1/4 cup pure maple syrup
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg

  • 1 tbsp coconut oil

Instructions
Slice method
  1. Preheat oven to 160C and line a loaf tin with baking paper.
  2. Place dates in a small saucepan with water, bring to boil.
  3. Turn heat off and allow to cool slightly.
  4. Place dates and any leftover liquid into a food processor with the bicarb. Blitz until a smooth paste is formed.
  5. Place date mix into a mixing bowl with the flour, egg, milk, butter, maple syrup, cinnamon and nutmeg.
  6. Pour mix into lined loaf tin and bake for 15-20 minutes or until the centre bounces back when pressed lightly.
  7. Allow to cool slightly before slicing carefully in half to form two rectangles. Allow to cool while you make the filling.
Centre filling method
  1. Place dates, water and coconut oil in a small saucepan. Bring to the boil, turn off and allow to cool slightly.
  2. Place in food processor and blitz until a smooth paste forms.
  3. Spread mixture over one half of the slice and place the other half on top.
  4. Slice into 10 pieces and store in an airtight container in the fridge.
