If you follow food trends on social media, there’s a good chance you’ve already seen the latest rice cake craze that’s currently sweeping platforms like Tik Tok.

Rice cakes have been around for a long time and are viewed as a relatively healthy option but not always the most fun to eat on their own! It’s all about the toppings and this trend originated from a recipe using rice cakes as a base and topping them with peanut butter and chocolate and freezing till hard. Then came a host of other toppings from crushed fruit, nuts and even marshmallows.

3 New Rice Cake Recipes

1. Biscoff Mousse Rice Cakes – 362 calories

Ingredients

Method

  1. In a bowl, combine the yoghurt, Biscoff spread and Caramel Bikkie Smoothie powder, mixing well.
  2. Spread the yoghurt mix evenly onto the corn thins, then place in the freezer for 10-15 minutes until the yoghurt is semi frozen or firm.
  3. Melt the dark chocolate in short increments in the microwave, then spread over the corn thins to cover the yoghurt layer.
  4. Place back into the freezer for 5-10 minutes, then serve immediately.

2. Choc, Peanut & Raspberry Rice Cakes – 299 calories

Ingredients

  • 2 x rice cakes OR corn thins
  • 25 grams dark chocolate
  • 1 tablespoon peanut butter
  • 2 tbsp raspberries fresh or frozen, for decorating
  • 1 tsp shredded coconut.

Method

  1. Melt chocolate in short increments in the microwave, then stir through peanut butter.
  2. Spread the chocolate mixture evenly over 2 rice cakes.
  3. Top with raspberries and coconut, then place in the freezer for 10 minutes to set, then serve immediately.

3. Strawberry Collagen Rice Cakes – 300 calories

Ingredients

Method

  1. In a bowl, combine the yoghurt and collagen powder, then spread evenly over 2 rice cakes.
  2. Place in the freezer for 20 minutes to allow the yoghurt to set.
  3. Melt the dark chocolate in short increments in the microwave, then spread over the rice cakes to cover the yoghurt.
  4. Place back in the freezer for 5-10 minutes to set, then serve immediately.
