  • 1/2cup corn kernelsfresh or tinned
  • 1/4 avocadodiced
  • 1 spring onionfinely sliced
  • 1tsp lemon juice
  • 1/4tsp ground cumin
  • 1/2tsp dried Italian herbs
  • cooking oil spray
  • 1 free range egg
  • 1slice wholegrain bread of choice
Instructions
  1. Combine corn with diced avocado, sliced spring onion, lemon juice, cumin and Italian herbs.
  2. Lightly spray a frypan with cooking oil over medium-high heat and fry egg to your liking.
  3. Toast bread and top with egg and salsa to serve.
