Ingredients
  • 1.5kg spudlite potatoes
  • 2tbs Cornflour
  • 1/2 cup reduced fat mayonnaise
  • 2 tbs no added sugar tomato sauce
  • 2tbs American mustard
  • 1 tsp dried dill
  • 1/4cup Burger pickles, finely chopped
  • 1tbs smoked paprika
  • 1tbs apple cider vinegar
  • 500g beef mince
  • 2tsp garlic powder
  • 2tsp onion powder
  • 1/2tsp Pepper
  • 1tsp salt
  • 400g lentils, rinsed and drained
  • 1cup shredded light cheddar cheese
  • 2cups Iceberg lettuce, chopped
  • 1/2 red onion, finely diced
Instructions
  1. Preheat oven to 180* and line 2 baking trays with baking paper.
  2. Chop potatoes into even “chip” sized pieces and place into a container with a lid. Add the cornflour and give a good shake to evenly coat the chips, then spread evenly over the baking trays. Bake in the oven for 50-60 minutes until golden, turning regularly.
  3. While the chips are cooking, prepare the sauce by combining the mayonnaise, tomato sauce, mustard, dill, pickles, apple cider vinegar, ½ tsp garlic powder, ½ tsp onion powder and half of the paprika, then set aside.
  4. Heat a fry pan over a medium heat, spritz with cooking oil, then add the beef mince, cooking until brown.
  5. Add the remaining paprika, garlic powder, onion powder, salt, pepper and lentils, mix well, then remove from the heat.
  6. Once the chips are golden, remove from the oven, and place onto a serving plate. Top the chips with the meat mixture, cheese, lettuce, onion and prepared sauce to serve.
