Ingredients
Cake
  • 1/2cup melted coconut oil
  • ¾cup rice malt or maple syrup
  • ¼cup stevia
  • 3 eggs
  • 1 2/3cup wholemeal self raising flour
  • ½tsp baking powder
  • 4tbsp raw cacao powder
  • 1tsp cinnamon
  • 2 carrotsgrated
Icing
  • 250g fresh light ricotta
  • 3-4tbsp rice malt or maple syrup
  • 1tbsp fresh lemon juice
  • zest of ½ lemon
  • ¼cup dark chocolategrated
  • 1/2 carrotspiralised (optional), to decorate
Instructions
  1. Preheat oven to 180°
  2. Grease a spring form pan and line the base with baking paper.
  3. Mix together oil, syrup, eggs and stevia until well combined.
  4. Add flour, baking powder, cacao and cinnamon and mix well.
  5. Stir in carrot.
  6. Bake approximately 35 minutes or until a skewer in the centre of the cake comes out clean.
  7. Remove from the pan and place on a wire rack to cool completely.
  8. Once cooled, beat ricotta, syrup, lemon juice and zest together until smooth. Spread over the cake and top with grated chocolate and carrot (if using).
  9. Serve immediately or refrigerate up to 2 days.
