cheddar or tasty

smoked ham
chopped

small red capsicum

cup
chopped spinach
Salt and pepper to taste

fresh chives
Olive oil spray
Instructions
Preheat oven to 180c.
Mix eggs and milk together
Add cheese, ham, capsicum, spinach, salt and pepper, mix well.
Spray tray of choice (can use muffin tray, mini loaf trays etc) with olive oil spray to prevent sticking if needed, then spoon mixture into tray.
Top with chives.
Place in the oven for 18 minutes or until cooked through.
Serve immediately or can be placed in the fridge to eat later, cold or heated up.
