Ingredients
  • 1/2 head white cabbagefinely chopped
  • 4 Lebanese cucumberfinely diced
  • 1tbsp fresh chivesfinely sliced
  • 5 spring onionfinely sliced
  • 2 lemonsjuiced
  • 1/4cup extra virgin oil
  • 2tbsp apple cider vinegar
  • 2cloves garlic
  • 1/4cup cashew nutsunsalted
  • 4tbsp fresh basil leavestorn
  • 1cup baby spinach
  • 1cup Nutritional Yeast
  • ttsp salt
Instructions
  1. Finely dice your salad ingredients (cabbage, cucumber, chives and spring onions) small enough you can have it on a cracker or carrot stick.
  2. Place into a bowl together and mix well.
  3. In a food processor mix the remaining ingredients to make your salad dressing.
  4. Blend this well until a dressing is formed.
  5. Mix your dressing on top of your salad.
  6. Stir everything together until well combined.
