Ingredients
  • 8 medium potatoesthinly sliced
  • 12slices lean smoked ham
  • 1cup kalamata olivespitted and halved
  • 1 red onionthinly sliced
  • 1red capsicumthinly sliced
  • 1 3/4cups tomato passata
  • 1 1/2cups reduced-fat mozzarella cheese
Instructions
  1. Preheat oven to 190C.
  2. Lay a third of the potato slices over the bottom of a baking dish.
  3. Top with a third of the ham, olives, onion, capsicum, tomato passata and cheese.
  4. Repeat with the remaining ingredients to create three layers in total, making sure the top layer is cheese.
  5. Cover with baking paper, then wrap tightly with foil. Bake for 60 minutes, remove the foil and baking paper and cook for a further 15 minutes until golden on top.
  6. Divide into 6. One piece is one serve.
  7. Leftovers can be stored in an airtight container in the fridge for 2-3 days or freeze for up to 2 months.
