Ingredients
  • 1/2 green appleskin removed and diced (50 grams)
  • 1/4tsp cinnamon(0.3 grams)
  • 1tsp vanilla extract(5 mls)
  • 2tbsp honey(10 mls)
  • 1/4cup wholemeal self raising flour(30 grams)
  • 1/4cup almond milk, unsweetened(62.5 mls)
  • 1tbsp reduced-fat Greek natural yoghurt(20 grams)
  • Natural yoghurt, honey and cinnamon for the topping is optional
Instructions
  1. Place the apple in a microwave-safe mug and microwave until soft, for about a minute.
  2. Add the rest of the ingredients and combine with the apple. Add a little more milk for a smooth batter if required.
  3. Return to the microwave for 2 minutes or until cooked through.
  4. Tip onto a plate and top with yoghurt (use a dairy-free option if needed), some honey and some extra cinnamon to serve.
