Ingredients
  • 1/4cup espressohot
  • 1teaspoon gelatin powder
  • 1tablespoon coconut sugar
  • 375grams smooth ricotta cheese
  • 1tablespoon cacao powder
  • 1tablespoon pure maple syrup
  • 1 egg white
  • 2squares dark chocolate
Instructions
  1. Brew espresso using your preferred method.
  2. Add gelatin powder and coconut sugar to hot espresso and mix well to combine, then set aside to allow to cool.
  3. Beat ricotta, cacao powder and maple syrup together using electric beaters or a hand whisk, then set aside.
  4. Whisk egg white until it forms soft peaks.
  5. Combine the espresso mixture and ricotta mixture and whisk until well combined.
  6. Gently fold egg white though the mixture then spoon into serving bowls.
  7. Pop into fridge to set for around 3 hours.
  8. When ready to serve, shave chocolate over the top and enjoy.
