Chocolate Peanut Butter Oat Cookies

Ingredients
  • 1cup rolled oats
  • 2tablespoons pepitas
  • 2tablespoons coconut oil
  • 2tablespoons pure maple syrup
  • 2tablespoons cacao powder
  • 3tablespoons peanut butter
  • 1/4teaspoon vanilla extract
Instructions
  1. Add oats and pepitas to a bowl and set aside.
  2. Place a small saucepan over low heat and add coconut oil, maple syrup, cacao powder, peanut butter and vanilla extract. Heat slowly and stir until melted and well combined.
  3. Remove from heat and pour over oats and pepitas.
  4. Mix until well combined then spoon into moulds or patty cases
  5. Pop in the fridge or freezer to set.
  6. Keep stored in fridge or freezer in an airtight container.
