Ingredients
  • 225grams cooked frozen peasdrained
  • 120grams reduced-fat cheddar cheesegrated
  • 1 egglarge, beaten
  • 4tbsp plain wholemeal flour
  • 1 lemonjuice and zest
  • 2tbsp fresh mintchopped
  • 2tbsp olive oil
  • 250grams reduced-fat Greek yoghurt
Instructions
  1. Place the cooked peas in a large bowl and add the flour, lemon zest, cheese, egg, and mint.
  2. Use your hands to combine well and form into small, flat fritters.
  3. Heat a large fry pan over medium heat and add the 1 tbsp of the olive oil.
  4. Cook half the fritters, turning after a couple of minutes.
  5. Once the fritters are crispy and golden brown remove from heat and set aide on paper towels to absorb excess oil.
  6. Add second tbsp of oil to the pan and cook remaining fritters.
  7. Meanwhile, mix the lemon juice into the yoghurt.
  8. Serve the fritters with the lemony yoghurt as a dipping sauce.
