Ingredients
  • 1.5cups wholemeal self raising flour
  • 3/4cup light greek yoghurt
  • 1/2tsp vanilla bean paste
  • 2tbsp coconut sugar
  • 1/2tsp cinnamon
  • 1/2cup peanut butter
  • 1/2 cup jam
Instructions
  1. Preheat oven to 160C.
  2. Line baking tray.
  3. Mix the flour with yoghurt.
  4. Add vanilla bean paste, coconut sugar and a good sprinkling of cinnamon. Mix until it resembles a dough (you may need to add more flour depending on the consistency of the yoghurt used)
  5. Turn onto a floured surface and knead until smooth.
  6. Roll out to a 2cm thickness and use a cutter to make the biscuit shapes. We used hearts because who doesn’t want to be reminded of self love when eating good food!
  7. Place onto tray and bake in preheated oven for 10 minutes.
  8. Remove from oven, increase oven temperature to 180C and top with your topping of choice. Peanut butter and jam is my all time fave and the Healthy Mummy chia berry jam is a great low sugar recipe which you could use!
  9. Bake for an additional 15 minutes and then allow to cool.
