Ingredients
Base
  • 1/4cup almonds
  • 1/4cup desiccated coconut
  • 6 medjool datespitted (or use 1/2 cup pitted dates that have been soaked in boiling water for 15 minutes and drained)
  • 1/4cup oats
  • 1tablespoon coconut oilmelted
Filling
  • 6 medjool datespitted (or use 1/2 cup pitted dates that have been soaked in boiling water for 15 minutes and drained)
  • 1/2cup peanut butter
  • 2tablespoons maple syrup
  • 1tablespoon coconut oilmelted
  • 2tablespoons peanuts
Chocolate drizzle
  • 15grams dark chocolatetry to use 70%
Instructions
Base
  1. Line tray with baking paper and set aside (I used tray measuring 25cm x 13cm).
  2. Blitz all ingredients together until sticky and well combined.
  3. Press into lined tray and pop in freezer to set.
Filling
  1. Blitz dates until broken down and sticky.
  2. Add peanut butter, maple syrup and coconut oil and blitz again until combined.
  3. Fold through peanuts then remove base from freezer and spoon mixture over the top of the base. Pop back in freezer to set.
Chocolate Drizzle
  1. Once filling is set, remove from freezer.
  2. Melt chocolate using preferred method.
  3. Drizzle over top of filling and pop back in fridge/freezer to set.
  4. Can be stored in fridge or freezer.
