Ingredients
  • 1cup wholemeal flourgluten free flour can also be used
  • 3 egg whites
  • 1/2cup coconut sugarNatvia can also be used
  • 3/4cup whole almondsskin on
Instructions
  1. Preheat oven to 160C.
  2. Carefully whip egg whites until soft peaks form. Slowly add in sugar or sweetener of choice until cup is empty.
  3. Gently fold in flour and almonds.
  4. Line a loaf tin with baking paper and pour in batter.
  5. Place in oven and cook for 40-50 minutes or until slightly golden.
  6. Allow to cool then wrap in aluminium foil. Leave for a day to harden.
  7. Cut into 10 thin slices and place on a baking tray. Cook on a low heat for 5 minutes before turning and cooking for another 5 minutes. Once brown take out and leave to cool on rack before eating or storing in an airtight container in the pantry.
