Ingredients
  • 1tsp olive oil
  • 1 brown oniondiced
  • 1clove garlicdiced
  • 1cup vegetable stock
  • 1can Tomatoes
  • 1tsp salt
  • 1tsp Pepper
  • 200grams small salmon filletscut into cubes
  • 1can cannelloni beans
  • 1/2bunch fresh parsely
  • 2cups baby spinach
  • 1/2 fresh lemonjuiced
Instructions
  1. Place olive oil, onion and garlic into a hot crock pot or heavy based pan over medium heat and cook for 2-3 minutes or until soft.
  2. Turn up the heat and add stock, tomatoes and salt and pepper and stir, bringing to the boil.
  3. Add the salmon, beans and parsley and stir for 5 minutes or until salmon is cooked to your liking.
  4. Divide baby spinach in 2 bowls and top with salmon and tomato mix.
  5. Serve with fresh squeezed lemon.
