Ingredients
8
good quality lean sausages
1
tbsp
olive oil or coconut oil
3
cloves
garlic
peeled and finely chopped
1
medium sweet potato
peeled and cut into chunks
2
red onions
peeled and cut into chunks
1
zucchini
sliced into rounds
1
carrot
peeled and sliced into rounds
1
cup
chicken or vegetable stock
2
tbsp
dried rosemary
Salt and pepper to taste
1
lemon
juice and zest
Instructions
Preheat your oven to 200C.
If you have one, use a dish that can go from the stove top into the oven.
Heat the oil in the dish over medium/high heat.
Add the garlic and the onions and stir fry for around 3 minutes.
Add the stock and bring it all together for a further 3 minutes.
Add all of the veggies and the sausages. Season well and add the rosemary.
Place in the oven, uncovered, for 30 minutes.
Give everything a stir and then add your lemon juice and zest before stirring again.
Return to the oven for a further 30 minutes or until the sausages have browned and the vegetables are golden.
