Ingredients
  • 4cups mixed lettuce leaves120 grams
  • 1punnet cherry tomatoes, halved250 grams
  • 1 Lebanese cucumber, thinly ribboned and rolled200 grams
  • 4slices smoked salmon, torn100 grams
  • 1/2 red onion, finely sliced50 grams
  • 1 & 1/2tbsp light cream cheese30 grams
  • 2 & 1/2tbsp small capers25 grams
  • 2tbsp fresh dill, to garnish10 grams
  • 1tbsp extra virgin olive oil20 mls
Instructions
  1. On a large platter form a circle of mixed lettuce, gently decorate with cherry tomatoes, cucumber rolls, smoked salmon and red onion.
  2. Add ½ teaspoon dollops of cream cheese through the salad.
  3. Top with capers, dill sprigs and lightly drizzle salad with olive oil.
