Ingredients
  • 185grams tinned tuna
  • 3tbsp fresh lemon juice
  • 1/3cup peas
  • 1/2 Oniondiced
  • 1slice wholemeal breadprocessed into crumbs
  • 2 eggswhisked
  • 3tbsp Parmesan cheese
  • Salt and pepper to taste
  • 2tbsp olive oil
Instructions
  1. Drain tuna well and break up with a fork.
  2. Add lemon juice, peas, onion, and breadcrumbs. Mix well.
  3. Add the eggs, parmesan, salt and pepper and mix to combine.
  4. Form into 6 patties and squeeze out any excess liquid.
  5. Heat the oil in a frying pan over medium heat.
  6. Pan fry the patties on each side until golden.
  7. Cool on absorbent paper.
