Ingredients
  • 4 small red capsicumslids removed and kept, seeds and membranes removed
  • 1tbsp olive oil
  • 1 medium onionpeeled and finely chopped
  • 1cup button mushroomschopped
  • 1cup cooked quinoa
  • 1/2 lemonjuiced and zested
  • 4tbsp chopped pistachioscashews or hazelnuts can also be used
  • 3tbsp reduced fat fetacrumbled
  • 2tbsp fresh parsleychopped, to serve
  • Olive oil spray
Instructions
  1. Preheat the oven to 180C.
  2. Spray the inside and outside of the capsicums with olive oil spray and place on a lined baking tray.
  3. Heat the oil in a frying pan over medium/high heat.
  4. Cook the onion until tender, then add mushrooms.
  5. Add the onion and mushrooms to the rest of the ingredients in a large bowl. Mix well with your hands to combine.
  6. Stuff the mixture into the 4 capsicums and place the lids back on top.
  7. Cook in the hot oven for around 20 minutes or until the tops are golden.
