- 4 small red capsicums lids removed and kept, seeds and membranes removed
- 1 tbsp olive oil
- 1 medium onion peeled and finely chopped
- 1 cup button mushrooms chopped
- 1 cup cooked quinoa
- 1/2 lemon juiced and zested
- 4 tbsp chopped pistachios cashews or hazelnuts can also be used
- 3 tbsp reduced fat feta crumbled
- 2 tbsp fresh parsley chopped, to serve
- Olive oil spray
