Ingredients
  • 1/2cup rolled oats
  • 1/2cup raw cashewsunsalted
  • 1/2cup coconutdesiccated or shredded
  • 2tbsp pepitas
  • 1tsp vanilla extract
  • 2tsp water
  • 2tbsp rice malt syrup
  • 2tbsp dried cranberries
Instructions
  1. Blitz oats, cashews, coconut and pepitas for 15-20 seconds.
  2. Add remaining ingredients and blitz until just combined. Don’t over blitz.
  3. Press into mini silicone moulds, pattie cases or a tray lined with baking paper and place in the fridge to set.
  4. Once set, pop them out of the moulds or cut into pieces if using a tray.
  5. Keep stored in the fridge or freezer in an airtight container.
