Ingredients

rolled oats

raw cashews
unsalted
1/2
cup
coconut
desiccated or shredded

tbsp
pepitas
1
tsp
vanilla extract
2
tsp
water
2
tbsp
rice malt syrup
2
tbsp
dried cranberries
Instructions
Blitz oats, cashews, coconut and pepitas for 15-20 seconds.
Add remaining ingredients and blitz until just combined. Don’t over blitz.
Press into mini silicone moulds, pattie cases or a tray lined with baking paper and place in the fridge to set.
Once set, pop them out of the moulds or cut into pieces if using a tray.
Keep stored in the fridge or freezer in an airtight container.
