Ingredients
  • 1/3cup brown riceuncooked
  • Olive oil spray
  • 4 free-range eggs
  • 1/2 zucchinigrated
  • 1/3cup parmesangrated
  • 2tbsp reduced fat fetacrumbled
  • 2tbsp mint leaveschopped
  • 1cup rocket lettuce
Instructions
  1. Prepare rice according to packet directions.
  2. Preheat oven to 200C. Lightly spray an individual ramekin with cooking oil spray. If preparing more than one serve, use a larger baking dish to fit all ingredients.
  3. Whisk eggs and combine with cooked rice, zucchini, Parmesan, feta and mint.
  4. Pour mixture into prepared ramekin/baking dish and bake for 20 minutes or until egg is cooked through and firm.
  5. Serve topped with fresh rocket.
