Ingredients
  • 1/2tin passionfruit pulpor 1 whole passionfruit
  • 1/4cup honey
  • 2/3cup light coconut milk
  • 1tbsp coconut oilmelted
  • 1tsp vanilla essence
  • 1 egg
  • 1.5cups wholemeal self raising flour
  • cooking oil spray
Instructions
  1. Preheat the oven to 180C and spray 12 holes of a muffin tin with oil spray.
  2. Mix the passionfruit, honey, coconut milk, coconut oil, vanilla and egg together. Slowly stir in flour.
  3. Spoon mixture into the 12 muffin holes and bake for 12-15 minutes or until a skewer inserted into the centre comes out clean.
  4. Store in an airtight container in the fridge for 2-3 days.
