Ingredients

  • 5 egg whites
  • 1tbsp cacao powder
  • 1scoop Healthy Mummy Smoothie mixany flavour (or use Healthy Mummy protein powder)
Cream
  • 2tbsp cream cheeseor mascarpone cheese
  • 1/2scoop Healthy Mummy Smoothie mixany flavour
Instructions
Biscuit
  1. Whisk the 5 egg whites until soft peaks form.
  2. Using a spatula, gently fold in the cacao powder and the smoothie mix.
  3. Pipe or spoon the meringue mixture onto a lined baking tray to make 16 small meringues.
  4. Cook at 120C for 35-40 minutes.
Cream
  1. Use a spoon to mix the cream cheese and the smoothie mix.
  2. When meringues cool down pipe the cream cheese onto half of the meringues and top with another to make a meringue sandwich.
