Ingredients
  • 1cup wholemeal self raising flour
  • 1cup white self raising flourcan use all wholemeal if you like
  • 1tsp baking powder
  • 1cup dried, pitted dates
  • 2 large bananasripe
  • 2 eggs
  • 100grams plain Greek yoghurt
  • 1tsp vanilla extract
Instructions
  1. Boil dates in 1 cup of water until it is reduced by half.
  2. While the dates are boiling, add all dry ingredients to a bowl.
  3. Mash bananas with a fork making them as fine or chunky as you would like then add vanilla, yoghurt and eggs.
  4. Puree dates in a blender with remaining water in pan and add all ingredients together in one bowl.
  5. Mix until just combined and spoon evenly into 24 patty pans.
  6. Cook for approx 15-20 minutes at 180 degrees celsius or until a skewer comes out clean.

Makes 24 small muffins at approximately 71 calories per serve.
