Ingredients

cup
wholemeal self raising flour
1
cup
white self raising flour
can use all wholemeal if you like
1
tsp
baking powder
1
cup
dried, pitted dates
2
large bananas
ripe
2
eggs
100
grams
plain Greek yoghurt
1
tsp
vanilla extract
Instructions
Boil dates in 1 cup of water until it is reduced by half.
While the dates are boiling, add all dry ingredients to a bowl.
Mash bananas with a fork making them as fine or chunky as you would like then add vanilla, yoghurt and eggs.
Puree dates in a blender with remaining water in pan and add all ingredients together in one bowl.
Mix until just combined and spoon evenly into 24 patty pans.
Cook for approx 15-20 minutes at 180 degrees celsius or until a skewer comes out clean.

Makes 24 small muffins at approximately 71 calories per serve.
