Ingredients
  • 1cup butter(250g)
  • 1cup biscoff spread(200g)
  • 1cup coconut sugar(190g)
  • 1cup Rapadura Sugar available from Health Stores(240g)
  • 1cup wholemeal self raising flour(100g)
  • 2 eggs(100g)
  • 1tbs golden syrup(20g)
  • 2tsp vanilla essence(10mls)
  • 4cup plain wholemeal flour(480g)
  • 2tsp baking powder(5g)
  • 0.5grams salt
  • 2tsp ginger(8g)
  • 2tsp cinnamon(2g)
  • 1tsp ground nutmeg(1g)
  • 3tbs Dark chocolate baking chips(30g)
Instructions
  1. Preheat oven to 160C and line a baking tray with baking paper
  2. Combine all ingredients, except for the chocolate chips, in a large bowl and mix well with a wooden spoon
  3. Flour a clean work surface and roll out the dough to around 1cm thick and cut out shapes
  4. Place your cut pieces of dough on the prepared baking tray and bake for 12-15 minutes or until your cookies are golden.
  5. While your cookies are still warm, decorate with the chocolate chips, then allow to completely cool.
  6. Store cookies in an airtight container.
