Ingredients
  • 1/3cup dried datespitted
  • 80ml boiling water
  • 1cup cashews
  • 1tbsp cacao or cocoaplus extra to roll (optional)
  • 1scoop Healthy Mummy Protein powderoptional
  • 1/2cup rolled oats
  • 1tbsp coconut oilmelted
  • 1/2tsp peppermint essence
Instructions
  1. Place dates in a shallow bowl and cover with boiling water for ten minutes.
  2. Place dates in food processor including water with all remaining ingredients and blitz until combined.
  3. Transfer mix into bowl and place in fridge for 15 minutes until mixture firms up.
  4. Use wet hands to roll mixture into 15 balls and roll in optional extra cacao or cocoa.
  5. Store on refrigerator for up to 7 days or freezer up to 3 months in an airtight container.
