Ingredients
Base

roasted almonds
you could also use walnuts or cashews

desiccated coconut

pitted medjool dates

rolled oats

coconut oil

Topping
¾
cup
cherries
fresh or frozen, pitted

ml
light coconut cream

tbsp
maple syrup

tsp
vanilla extract
Instructions
Base
Line pan with baking paper and set aside (approx 25cm x 12cm)
Blitz all ingredients together until desired consistency.
Press into lined pan and pop in freezer to set.
Topping
Blitz all ingredients together, remove set base from freezer and pour topping over base.
Pop back in the freezer to set.
Once set, slice into 12 pieces. Store in freezer.
Remove from freezer and allow to soften at room temperature before serving.
