Ingredients
  • 300g raw pasta of your choice
  • 1cup cooked chickenshredded, optional
  • 1 avocadoripe
  • 1bunch fresh coriander
  • 1/2 limejuiced
  • 3tbsp natural or Greek yoghurt
  • 1tsp garlicminced
  • Salt and pepper to taste
  • 2tbsp Parmesan cheeseto serve
Instructions
  1. Cook pasta according to the instructions. Drain and set aside.
  2. Peel your avocado and remove the seed.
  3. Blend in a food processor with the coriander, lime juice, yoghurt and garlic until it’s creamy.
  4. Season to taste and add to the pasta along with the chicken, if using.
  5. Toss the pasta to coat with the sauce and serve sprinkled with the Parmesan cheese.
