Ingredients
  • 400grams lean chicken mince
  • 2cloves garlic, minced6 grams
  • 4 spring onion, chopped60 grams
  • 1/2tsp dried chilli flakes0.5 grams
  • 1/3cup extra virgin olive oil83.3 mls
  • 2cups broccoli200 grams
  • 2medium carrot, sliced140 grams
  • 2cups green beans, trimmed240 grams
Instructions
  1. In a mixing bowl, combine chicken mince, garlic, onion and chilli flakes.
  2. Heat oil in a frying pan over medium heat.
  3. Form the chicken mix into two rissoles per serve, flatten slightly and cook for 5 minutes on each side in the frying pan or until cooked through.
  4. While the rissoles are cooking, cut broccoli into florets and steam with carrot and beans on the stovetop or in the microwave until tender to crisp.
  5. Serve rissoles with veggies on the side.
