Ingredients
  • Zest and juice of 1 lime + 1 limequartered for serving
  • 100ml light coconut milk
  • 2tsp Minced Garlic
  • 1tsp minced chilli
  • 2tbsp soy sauce
  • 4 kaffir lime leavesfinely chopped
  • 800g prawnspeeled and de-veined
  • Salt and pepper to taste
  • 12 wooden skewers
  • Olive oil spray
Instructions
  1. Place the lime juice, zest, coconut milk, garlic, chilli, soy and kaffir lime leaves into a bowl.
  2. Add the prawns and toss well to combine.
  3. Cover and chill in the fridge for at least an hour.
  4. Meanwhile, soak the skewers in water to prevent burning on the BBQ.
  5. Thread the prawns onto the skewers, discard the leftover marinade.
  6. Heat the BBQ to med/high and spray with olive oil.
  7. Cook the skewers for around 3 minutes on each side or until cooked to your liking.
  8. Serve with the extra lime wedges.
