wholemeal self raising flour

pure maple syrup

coconut oil
not solid but not completely melted, just soft

Ingredients for caramel icing

pitted dried dates

coconut cream

Instructions
Preheat oven to 190 degrees, line baking tray with baking paper. Or you can use a muffins tin to cook the cookies in.
Mix all the ingredients for the choc cookies in a bowl, mix with your hands to ensure it is mixed well and comes together to form a dough.
Roll into 12 balls and put onto your baking tray or muffin tin, then press slightly down with your thumb to flatten slightly.
Bake for 10-15 min.
Once ready, let them cool on the tray then transfer to a wire rack.
Make the icing by placing the pitted dates and water in a small saucepan on medium heat.
Bring to the boil to soften dates, once the water starts to evaporate add the coconut cream.
Reduce to a simmer and stir the mix every couple of minutes.
Once it’s slightly thickened, take off the heat and blitz in a food processor to form a thick caramel icing to spread over your cookies.
