Ingredients
  • 1/3cup pitted datestightly packed
  • 1cup boiling water
  • 1tbsp chia seeds
  • 1/4cup rolled oats
  • 1pinch salt
  • 1tsp pepitas
  • 1tsp sunflower seeds
  • 30grams dark chocolate70% cacao or higher
Instructions
  1. Soak dates in boiling water for 10 minutes, and then drain.
  2. Line a small tray with baking paper and set aside.
  3. Blitz dates, chia seeds, oats and salt until well combined but not over worked.
  4. Press mixture into mini silicone mould or make a disk shape on baking paper and pop in the freezer to firm up.
  5. Finely chop the pepitas and sunflower seeds and set aside.
  6. Once the bite mixture is firm, melt chocolate using your preferred method.
  7. Dip bites halfway into the chocolate and place on a baking paper lined tray.
  8. Sprinkle with seeds and place in the fridge or freezer to set.
  9. Can be kept in the fridge or freezer.
