Ingredients
  • 3/4cup cashews
  • 1/2cup boiling water
  • 2cups rolled oats
  • 3tbsp cacao
  • 2scoops Healthy Mummy chocolate whey protein powderor use chocolate Healthy Mummy Smoothie powder
  • 1large orangezested and juiced
  • 40grams dark cooking chocolate
Instructions
  1. Soak cashews in boiling water for 10 minutes.
  2. Place cashews (including the soaking water) into the food processor.
  3. Add oats, cacao powder, whey protein powder, orange zest and orange juice.
  4. Blitz on medium until combined.
  5. Transfer mixture into a mixing bowl and place into the freezer for 20 minutes to firm up.
  6. Use wet hands to roll the mixture into 20 balls.
  7. Melt chocolate and drizzle over the balls.
  8. Store in an airtight container in the fridge for up to 7 days.
