Instructions
Preheat oven to 175C and spray a muffin tray with olive oil spray
Combine all ingredients in a bowl until just mixed.
Spoon into the muffin tray and bake for 25-30 minutes or until a skewer inserted into the middle comes out clean.
Cool on a wire rack and then store in the fridge for 2-3 days.
