Ingredients
  • 1/2cup raw cashews
  • 2tablespoons desiccated coconut
  • 1/2cup frozen blueberries
  • 1tablespoon honey
  • 1tablespoon coconut oil
  • 1/2teaspoon vanilla extract
  • 160g dark chocolate70% cacao
Instructions
  1. Soak cashews in cold water for at least an hour, then drain.
  2. Blitz cashews and coconut until broken down completely.
  3. Add blueberries, honey, coconut oil and vanilla and blitz until well combined and smooth in texture.
  4. Press mixture firmly into silicon moulds or into a lined baking tray if you don’t have silicon moulds.
  5. Pop in the freezer to set.
  6. Once set, melt chocolate using your preferred method.
  7. Dip blueberry pieces into chocolate and place on a tray lined with baking paper.
  8. Pop back into the freezer to set then enjoy.
  9. Keep stored in the freezer.
