Easy Chorizo and Sweet Potato Rice Salad
Ingredients
  • 1cup brown rice
  • 100g chorizodiced
  • 800g sweet potatocubed
  • 2cups baby spinachchopped
  • 1tbsp olive oil
  • Salt and pepper
Instructions
  1. Preheat oven to 180C.
  2. Cook rice per packet instructions.
  3. Toss sweet potato in olive oil and season with salt and pepper.
  4. Roast sweet potato in oven for 20 minutes.
  5. Heat fry pan on medium heat and sauté chorizo until browned.
  6. Place roasted sweet potato, spinach, cooked chorizo and spinach into large mixing bowl, toss until combined.
  7. Serve and enjoy.
Recipe Notes

Store in air tight container in refrigerator for up to 4 days.

Makes 4 serves at 360 calories per serve.
