Ingredients
  • 500grams canned corn kernelsrinsed and drained
  • 1 cups shredded light mozzarella
  • 170grams light cream cheese
  • 2 large eggsbeaten (100g)
  • 4 spring onionsfinely chopped
  • 1/2tsp chilli powder
  • 1/2tsp garlic powder
  • 1/2tsp onion powder
  • 3/4cup polenta
  • 1/2cup plain wholemeal flour
  • 3/4cup wholemeal bread crumbs
  • 1/2cup Parmesan cheese
  • salt
  • Pepper
Instructions
  1. Preheat air fryer to 180C
  2. In a large bowl mix together corn, mozzarella cheese, cream cheese, spring onions, salt, pepper, garlic powder, onion powder, and chilli powder. Stir until well combined.
  3. Add polenta, flour and eggs to the corn mix, mix until well combined.
  4. In a small bowl combine the breadcrumbs and the parmesan cheese.
  5. Using a tablespoon scoop mixture and roll into balls.
  6. Roll corn bites into the parmesan mixture to coat.
  7. Place in the air fryer tray, ensuring no balls are touching. Cook for 8-10 minutes or until golden.
  8. 2 balls is one serve.
