Ingredients
  • 2tbsp Greek yoghurt
  • 1tbsp lemon juice
  • Salt and pepperto taste
  • 2 small red applesthinly sliced
  • 1/3cup dried cranberries
  • 1/4cup coarsely chopped walnuts
  • 1/4cup thinly sliced celeryabout 1 stalk
  • 1 cos lettucecore removed
  • 1/2cup fetacrumbled
Instructions
  1. Combine the yoghurt and the lemon juice in a salad bowl. Season to taste with salt and pepper.
  2. Add apples, cranberries, walnuts, lettuce and celery, and mix well into the dressing. Sprinkle with feta to serve.
  3. The salad tastes best if it has been refrigerated up to 2 hours before serving.
