Ingredients
  • 4medium potatoes, chopped(480 grams)
  • 1small sweet potato, chopped(160 grams)
  • 4 spring onion, finely sliced (60 grams)
  • 1/3cup sun-dried tomatoes, chopped(80 grams)
  • 1/3cup fresh parsley, chopped(20 grams)
  • 1/3cup fresh basil leaves, chopped(20 grams)
  • 1/3cup grated Parmesan(48 grams)
  • 1tablespoon apple cider vinegar(20 mls)
  • 1tablespoon lemon zest(16 grams)
  • salt
  • Pepper
  • 1tablespoon extra virgin olive oil(20 mls)
Instructions
  1. Steam potato and sweet potato on the stovetop or in the microwave until tender. Allow to cool.
  2. Combine potatoes, spring onion, sun-dried tomatoes, parsley, basil and Parmesan in a bowl. Dress with vinegar, oil and lemon zest. Toss to combine.
  3. Season with salt and pepper to serve.
