Ingredients
  • 2tbsp oats
  • 1cup desiccated coconut
  • 1tsp spirulina powder(can sub for Super Greens powder, matcha powder, or can be left out)
  • 1tbsp Healthy Mummy Smoothie mixvanilla flavour
  • 1tbsp maple syrup
  • 2tbsp coconut oilmelted
  • 1/2tsp mint essencecan add more if you want it extra minty
  • 75g dark chocolateI used Old Gold 70% others may change your calorie count
Instructions
  1. Line tray with baking paper and set aside.
  2. Blitz your oats until they become a fine powder.
  3. Add the coconut, spirulina, vanilla smoothie powder and give another quick blitz to combine.
  4. Add maple syrup, coconut oil and mint, then blitz again to combine.
  5. You can now either roll them into 16 balls or press into 16 mini silicon moulds (I found this much easier and faster to do). Then pop in freezer to set.
  6. While setting, melt your chocolate using your preferred method.
  7. Remove from freezer and dip into melted chocolate.
  8. Place onto baking paper lined tray and pop in fridge to set then ENJOY!
  9. Can be stored in fridge or freezer.
