Ingredients
Base
  • 1/3cup pitted dates
  • 1/4cup almonds, cashews or walnutsnatural or roasted (not salted)
  • 1/4cup rolled oats
  • 1/4cup desiccated coconut
  • 2tsp coconut oilmelted
  • 1tsp water
Chocolate Ganache
  • 1tbsp coconut oilmelted
  • 2tbsp pure maple syrup
  • 1tbsp cacao powder
  • 3tbsp natural peanut butter
  • 1/2tsp vanilla extract
Instructions
Base
  1. Soak dates in boiling water for 15 minutes then drain.
  2. Blitz dates, nuts, oats, coconut, coconut oil and water until well combined.
  3. Press into 12 moulds or in a pan (to be sliced once finished) and place in the freezer to set.
Ganache
  1. Mix all ingredients together until smooth.
  2. Remove base from freezer and spoon ganache over the top of the base.
  3. Pop in freezer to set.
