Ingredients
  • 12 medjool datespitted (or 1 cup of pitted dates, soaked and drained)
  • 1cup oats
  • 1tbs cacaoor cocoa
  • Pinch of saltoptional
  • 1/2tsp peppermint extractcan use 1 tsp if you want it extra minty
  • 2tbs coconut oilmelted
  • 1/4cup cashews
  • 1/4cup pepita seeds
  • 1tbs desiccated coconut
  • 40grams dark chocolateI use 70%
Instructions
  1. Blitz dates using food processor/blender until they create a paste.
  2. To the dates, add oats, cacao (cocoa), salt, mint and coconut oil.
  3. Add cashews, pepitas and coconut then blitz to your desired consistency.
  4. Press mixture very firmly into a lined slice tray/loaf pan or silicon moulds of your choice.
  5. Pop in fridge/freezer to set.
  6. While setting, melt chocolate using your preferred method.
  7. Remove slice from fridge/freezer and drizzle melted chocolate over the top.
  8. Cut into 12 pieces.
