Reserve a 1/2 tbsp of the goji berries and pumpkin seeds to sprinkle on top.
Add all ingredients (except for the extra 1 tsp coconut oil and dark chocolate squares) to blender, and whiz until all chopped up but not too blitzed, you still want some texture.
Spread mix into a slice tin and flatten down with the back of a metal spoon until flat and smooth.
Sprinkle the remaining goji berries and pumpkin seeds on top and smooth it all over with the back of a metal spoon. Push down into the slice a little to keep the slice in place and then place in freezer.
Melt the coconut oil and dark chocolate in microwave for 30 seconds, checking and stirring until all melted.
Take slice out of freezer and fill a ziplock bag with the melted chocolate. Snip the end and drizzle chocolate over slice. You could also just use a spoon to drizzle over too!
