Ingredients

lean beef steak
cut into 3cm dice

large red onion
peeled and finely diced

large carrot
peeled and finely diced

celery stick
finely diced

red capsicum
chopped

Minced Garlic

sprigs
fresh thyme
leaves only

large mushrooms

Salt and pepper

plain wholemeal flour

tomato paste
or use tomato sauce

Worcestershire Sauce

beef stock

cup
red wine
or use more beef stock

sheet puff pastry

tbsp
milk
for brushing pastry
Instructions
Preheat your oven to 150C.
Heat the olive oil in a large frying pan over med/high heat.
Brown the beef until golden, set aside.
In the same pan, cook the onion, carrot, capsicum celery and garlic for 4-5 minutes.
Add the thyme and the mushrooms and cook for a further 2 minutes.
Season to taste and then add the flour and tomato paste, stirring well for 1 minute.
Place the beef back into the pan and add the wine, stock and Worcestershire sauce.
Bring to the boil, then reduce the heat to low and cover.
Bake in the oven for 90 minutes.
Remove the pastry sheet from the freezer and allow to thaw on the bench.
Increase the heat of the oven to 190C.
Place the beef filling into a pie dish (or use a deep cake tin) and cover with the pastry, tucking into the sides.
Brush the top with milk and bake in the oven for around 25 minutes or until golden brown on top.
